OverviewDesign and develop cocktail programmes (costed, scalable, commercially viable)Build wine lists and beverage architecture aligned to concept positioningWork alongside suppliers and negotiate commerciallyCreate beverage SOPs, training manuals and mobilisation plansTrain and mentor bar teams pre- and post-openingMonitor GP%, stock control and cost optimisationContribute operationally across projects beyond beverageOngoing operations managementThe RoleYou Will:Lead/Support bar setup across multiple pre-opening venuesDesign and develop cocktail programmes (costed, scalable, commercially viable)Build wine lists and beverage architecture aligned to concept positioningWork alongside suppliers and negotiate commerciallyCreate beverage SOPs, training manuals and mobilisation plansTrain and mentor bar teams pre- and post-openingMonitor GP%, stock control and cost optimisationContribute operationally across projects beyond beverageOngoing operations managementYou will operate as part of an Operational Project Mobilisation Team with a task-based structure during the build phase, transitioning to multi-site or divisional operational responsibility as the portfolio mobilises.Required Experience5+ years in multi-site bar operations or senior bar leadershipPre-opening experience (essential)Strong cocktail development and drinks menu engineering capabilityDeep understanding of wine (WSET Level 2/3 preferred)Strong commercial acumen (GP%, costing, supplier negotiation)Experience working within premium, lifestyle or champagne-led venuesAbility to operate hands-on during mobilisationEducation & Certifications (Preferred)WSET Level 2 or Level 3Certified Mixologist / Bar Academy certificationFormal hospitality qualificationCoffee expertise (SCA certification desirable if café concepts are involved)What We’re Looking ForA commercially minded operator - not just a creativeA Team Player, someone comfortable in a scaling, evolving structureHands-on, delivery-focusedComfortable building from scratchFuture division leadership potential#J-18808-Ljbffr
